The current Chardonnay comes from Sonoma County’s cool Russian River Valley. The grapes are picked for acidity rather than sugar, as lime and green-apple flavors begin to emerge. The fruit is hand-picked and whole-cluster pressed, then fermented in French oak barrels, a portion of them new. The lees are stirred regularly during roughly 11 months of élevage.
