High West Cask Collection Bourbon Whiskey is a limited Park City blend of straight bourbons finished in Cabernet Sauvignon barrels—typically four to nine years in new oak, then months in the wine casks—and bottled at 100 proof (50% ABV). The Cabernet finish layers cherry and plum over caramel and toasted oak. Pour it after dinner over a large cube.
Cherry, raspberry, and plum sit on sweet caramel and vanilla. Toasted oak, cinnamon, and a little rye spice dry the fruit; the finish is long, with fig, dark chocolate, and a last flick of pepper.
