13th Colony Cask Strength Bourbon comes out of Americus, Georgia — the oldest operating distillery in the state since Prohibition — and they bottle it the way it leaves the barrel. Each year they dump a limited run of Southern Bourbon at full strength: 70% corn, 21% rye, 9% malted barley, five to six years in new charred oak, no water. South Georgia heat does the rest, so it drinks older than the years suggest.
Honey and baking spice, then vanilla syrup and orange marmalade with a herbal edge. Full and surprisingly easy for barrel proof, with a soft close instead of a blast of heat.
