Shibui 15 Year Old Sherry Cask Single Grain Japanese Whisky is Masahiro Distillery indica rice from Okinawa, black-koji fermented and double-distilled in stainless steel, then fifteen years in first-fill fino and manzanilla sherry casks in that subtropical warehouse, non-chill-filtered at 86 proof (43% ABV). Dry sherry wood is why milk chocolate and macadamia show with real weight. A bottle for sipping with friends.
Milk chocolate, caramel, and macadamia open first, then plum and blackberry. Cocoa powder and baking spice stand out on the palate; the mouthfeel is richer than the grain suggests, and the finish lingers on dark fruit, pepper, and a nutty close.
