WhistlePig 18 Year Old Double Malt Straight Rye Whiskey
WhistlePig 18 Year Old Double Malt Straight Rye Whiskey is the farm's oldest rye: eighteen years in American oak, then a finish in Pedro Ximenez sherry casks, which is why dried fruit and honey deepen the peppery grain. The mash is 91% rye and 9% malted barley, the old farmer-distiller trick of malting part of the harvest so fermentation starts; that malted barley is why floral, earthy sweetness shows up beside the spice. Bottled at 92 proof (46% ABV) in Shoreham, Vermont, under a handmade glass topper, in a limited annual run. Pour it as an after-dinner dram.
Toasted almond, caramel, and smoked maple lead, then grassy rye spice, honey, and dark fruit stand out on the palate with a creamy mid-weight. The finish is long, lingering on dried fruit, cocoa, and a last thread of honey.
