Heaven Hill 27 Year Old Barrel Proof Kentucky Straight Bourbon Whiskey is a one-time 2018 bottling of pre-fire Bardstown whiskey: distilled in 1989 and 1990 at Old Heaven Hill Springs Distillery, then aged 27 years in new charred oak after the 1996 fire took the plant. Only 41 barrels made the dump and the taste cut — 2,820 bottles — and the natural proof fell to 94.7 because most of those casks sat on humid first and second floors. That long, slow aging concentrates tobacco, dried fruit, and baking spice instead of climbing heat. Pour it as an after-dinner dram.
Dried fruit and baking spice open the glass, then pipe tobacco and seasoned oak take over. Vanilla and a floral lift sit under pepper and clove. The sip starts dry and wood-forward; the finish turns long and surprisingly soft, with cigar box, leather, and a last thread of caramel through the tannin.
