5 Sentidos Pechuga de Mole Poblano Mezcal
5 Sentidos makes this pechuga in Puebla, running the mezcal through a third distillation with mole poblano ingredients in the still. The agave is papalometl, roasted underground the way mezcal has always been made, and that pit smoke runs savory rather than sharp underneath everything else.
Cacao and chile sit together on the palate, close enough that neither one wins. Roasted agave holds the base, nuts and soft fruit fill in around it, and baking spice lingers after the smoke fades. The texture is fuller than a plain espadín blanco, which is what the pechuga method tends to do.
It is additive free, so what you taste is the agave and the still. Sip it at room temperature in a small copita, alongside something salty if you like. 750 mL.
