KOVAL Bottled-in-Bond Rye Whiskey is an allocated single-barrel rye from KOVAL Distillery in Chicago: 100% organic unmalted rye, heart-cut only, aged at least four years in 30-gallon charred American oak inside a federally bonded warehouse, then bottled at exactly 100 proof. Those smaller barrels push more wood onto a grain-forward rye than a standard cask would, which is why cinnamon and ginger show up beside toasted rye bread. It is USDA Organic and kosher. Pour it as an after-dinner dram.
Brandied cherry and milk chocolate on toasted rye bread lead, then cinnamon, ginger, apple, and a little mesquite. The body is full and grain-forward. The finish is rich and balanced, like rye bread pudding, with sweet spice settling into warmth.
