Balcones Cataleja Texas Single Malt Whisky
Texas heat does quick work on a barrel, and this single malt shows it. Four years is the minimum here, starting in refill oak and finishing across a run of sherry-style solera casks — Moscatel, Amontillado Dulce, Oloroso and Palo Cortado. That second stage is where the whisky picks up its dried-fruit weight.
Raisin and fig lead, thick and sweet without turning syrupy. Underneath sits dark chocolate and coffee, closer to espresso grounds than to anything milky, while toasted malt and baking spice run through the finish. It drinks rich rather than hot, which is not a given at 118 proof (59% ABV).
Bottled at cask strength, undiluted from the barrel, so it takes dilution well if you want it softer. A few drops open up the malt and pull the spice forward. The 750 mL bottle is an easy one to keep on the shelf for regular pouring.
