Cooked agave leads, sweet and vegetal the way it comes off the oven, and caramel folds in right behind it. Vanilla softens the edges, almond gives the palate a little bite, and a run of herbs and oak keeps the whole thing from turning dessert-sweet. Chocolate lingers at the close, dark rather than sugary.
This añejo comes from the highlands of Jalisco, where Blue Weber agave tends toward a rounder, fruitier expression. Aging happens in William Larue Weller bourbon barrels, and the wheated-bourbon influence shows in how gently the wood sits against the agave rather than covering it.
At 80 proof (40% ABV), it drinks easily neat and stays intact over a single large cube. The 750 mL bottle is the kind you open on a Thursday and still reach for when company comes.
