Hillrock Antonio’s Edition Bourbon Whiskey is Antonio’s named bottling of Hillrock Estate’s Solera Aged Bourbon from Ancram in New York’s Hudson Valley — field-to-glass whiskey, floor-malted on the farm, aged in a solera of small oak, then finished in twenty-year Oloroso sherry casks and bottled at 92.6 proof. Estate bourbon (about 37 percent rye) meets older seed whiskey so the glass stays deep without a single-vintage spike. Pour it when the table is still talking after dinner.

Caramel, dried fruit, and vanilla meet oak, cinnamon, and a floral lift. The sip is full: maple, brown sugar, toffee, roasted corn, and raisin against clove and rye spice. Fig, walnut, and candied fruit from the Oloroso hang on a warm caramel-and-butterscotch finish.
