Hillrock Solera Aged Bourbon Whiskey is Jeffrey Baker and Cathy Franklin's Hudson Valley flagship, designed with Dave Pickerell: a labor-intensive solera that keeps older whiskey in contact with younger, then a finish in 20-year-old Oloroso sherry wood. The sherry casks put walnut, fig, and candied fruit on caramel-vanilla bourbon, bottled at 92.6 proof. A weeknight pour that still feels like an occasion.
Floral fruit and cinnamon open over oaked caramel. The palate is sweet and spicy — brown sugar, toffee, raisin, and roasted corn, then clove. Walnut and candied fruit linger on a warm, medium-long finish.
