Hinotori 5 Year Old Blended Japanese Whisky takes its name from the phoenix: Hekinan Distillery in Aichi, founded in 1949, returned to whisky with this five-year malt-and-grain blend after disasters had halted production. Malt whisky is married with grain from corn and wheat, then matured five years in new American white oak, bottled at 86 proof. It was released as a limited 70th-anniversary bottling. Build a tall highball.
Apple, pear, and flowers open, with vanilla and light oak behind them. The sip is medium-bodied and round: ripe fruit, caramel, almond, and a biscuit-like malt sweetness. The finish is soft and a little nutty, with dry toast and gentle oak spice.
