Thirteen years in French oak sit behind this Calvados from the Pays d'Auge in Normandy, and the time shows in how easy it is to drink. Apples are the whole story here, distilled rather than fermented into wine, and long rest has taken them from fresh fruit to baked apple, soft and sweetened at the edges.
Pear comes through alongside that fruit, lighter and cleaner. Caramel and vanilla fill in underneath, and there is a dusting of cinnamon and toasted nuts on the finish that keeps it from turning sugary. At 82 proof (41% ABV) it stays gentle, with none of the heat that would make you reach for ice.
This is an everyday Calvados rather than a special-occasion one: good after dinner, good in a simple highball with cider, and steady enough that a 750 mL bottle earns its spot on the shelf rather than sitting untouched.
