Twenty-one years is a long stretch in the Highlands, and the time shows in the texture more than anything else — round, gently oily, with vanilla smoothing the edges. Ex-bourbon and sherry casks account for the two sides of it: the sweeter, softer character and the deeper, fruitier one, worked together over two decades.

This is a bottle for a Tuesday that deserves better than a Tuesday. The 750 mL format sits comfortably on a shelf you actually reach for, and a splash of still water opens the honey further without thinning the whisky.
