Cherry and ripe apricot come up first, sweet but not syrupy, with caramel sitting underneath and holding everything together. Fig and blackberry darken the flavor as it moves along, and the finish turns toward spice and oak without losing the fruit. There is a peach note in there too, softer than the rest.
This is a six-year Kentucky straight bourbon aged in new charred American oak and bottled at cask strength, undiluted at 115.2 proof (57.6% ABV). That strength shows up as weight rather than heat; the texture is thick and the fruit stays legible all the way through. A cube or a splash opens the orchard notes further if you want them louder.
Bardstown Bourbon Company's Discovery Series No. 12 comes in a 750 mL bottle. It drinks well straight from the bottle and holds its shape in an Old Fashioned, where the char and spice do most of the work.
