Bardstown Bourbon Company Foursquare Rum Barrel Finish Whiskey 107 Proof is the 2023 Collaborative Series with Foursquare in Barbados, about 3,000 cases at 107 proof. The blend is 90% Indiana rye aged 7 years (51% rye, 45% corn, 4% malted barley) and 10% Tennessee bourbon aged 17 years (84% corn, 8% rye, 8% malted barley), finished for 23 months in Foursquare rum barrels on the top floor of rickhouse G, where extra evaporation concentrates the rum. Foursquare’s unsweetened Barbados rum lays down plantain, coconut, and molasses, and the rye answers with black pepper.
Bardstown tastes plantain, toasted almond, clove, coconut, peanut, orange zest, and raisin, then rye spice, aged oak, baked fruit, and caramel. Breaking Bourbon found brown sugar, molasses, caramel, and barrel char, with stewed fruit in the middle and a long finish that dries out on oak and black pepper.
