Huber's Indiana bourbon aged at least four years in new charred American oak, then finished in Pedro Ximénez sherry casks so dried dark fruit and brown sugar wrap the sweet-mash grain. A nationwide blended lot was bottled around 111.4 proof. Pour it neat on a weekend night.
Cherry, fig, and blackberry lead, with brown sugar, toffee, and honey filling a wine-dark sip. Oak tannin and a thread of tobacco keep the PX from turning heavy. Honey and toffee linger on a long finish.
