Redbreast 27 Year Old Single Pot Still Irish Whiskey is Midleton pot still aged twenty-seven years in bourbon, Oloroso sherry, and ruby Port casks, bottled at cask strength at 109.2 proof. The Port pipes add dark-plum and berry sweetness on top of tropical fruit the extra decades never quite erase, and leaving the whiskey uncut keeps that fruit dense and syrupy. This is a cold-weather pour.
Mango, passion fruit, and dried figs lead, with vanilla, toffee, and toasted nuts through a rich, oily sip. Ripe plum, black cherry, and a prickle of chili-red pepper keep the Port from turning jammy. Ripe fruit and wood spice linger on an exceptionally long close, finishing on barley.
