Barrell Cask Strength Bourbon Whiskey is the shelf name of Barrell Craft Spirits’ numbered bourbon, blended in Louisville and bottled uncut. The back label is the reason to pick a batch up: it lists the straight bourbons in the glass, their ages, and a derived mashbill. Younger barrels carry fruit and spice. Older barrels, often well into their teens and always from American oak, bring honey, dried fruit, and a deeper wood note. The series has been the company’s center since 2013, and the recipe changes with every number.
Honey, butterscotch, dried fruit, vanilla, and baking spice are the notes that survive from batch to batch, laid over oak. A mature blend can turn earthy, with leather, toasted oak, and dark chocolate beside the caramel. The mouthfeel is oily and full. The finish lingers on spice and wood.
