Bottled at cask strength, undiluted straight from the barrel, Dovetail carries the weight you would expect and none of the sharpness. This is American whiskey drawn from more than one state and finished in Cabernet, port and blackstrap rum casks, and that three-way finishing shows in how sweet and dark the whiskey drinks.
Orange sits right up front, bright against fig and dark cherry underneath. Cocoa and hazelnut give the body a roasted, nutty weight, and a thread of mint runs through the finish and keeps it from turning heavy. There is real honeyed richness here, but it stays lively rather than syrupy.
Full proof means a splash of water opens it up considerably if you want it to, though it holds together neat. Comes in a 750 mL bottle.
