Barrell Dovetail Whiskey is the finished whiskey Barrell Craft Spirits spent nearly a year tuning, and it has stayed in the lineup since. Indiana whiskey rested in Dunn Vineyards Cabernet casks is married with Tennessee bourbon finished in blackstrap rum casks and Late Bottled Vintage Port pipes. The Cabernet lifts grapey, high-toned fruit. The port and the molasses rum push dark fruit, cocoa, and a burnt-sugar depth. Each blend is bottled at cask strength, and that strength shifts a little from one release to the next.
Breaking Bourbon’s first blend opened on candied raisin, molasses, and anise, then cane sugar, dark cherry, barrel char, and toasted marshmallow, mouth-coating and robust. The house notes stay in that lane: cocoa, cola, nutmeg, and Tellicherry pepper, finishing on chestnut honey, hazelnut, and mint. It is sweet, dark, and long, with pepper after the fruit.
