Chicken Cock's Chanticleer is a Kentucky straight bourbon given a finishing period in French Cognac casks, and the influence shows in how softly it lands. Peach and sweet cream come through early, more orchard than confection, with honey filling in behind them. Vanilla runs underneath the whole pour rather than sitting on top of it.
At 112 proof there is real weight here, but the sweetness keeps pace with the strength. Dark fruit arrives late — cherry and plum turning toward dates and caramelized sugar as the finish stretches out. The texture is rich without being syrupy, and the heat reads as warmth rather than bite.
This 2023 release comes in a 750 mL bottle and was made in small numbers, so it appears on shelves only occasionally. Neat is the honest way to meet it, though a single large cube will open the fruit without dulling the cask character.
