Chicken Cock Chanticleer Cognac Cask Finished Kentucky Straight Bourbon Whiskey is a 32-barrel release, bottled at 112 proof after a finish in French Cognac casks. Master distiller Gregg Snyder hand-selected each barrel. The mash is 70% corn, 21% rye, and 9% malted barley, enough rye that spice can stand next to the fruit the Cognac wood adds. Plum, cherry, and a tannic sweetness are the point of the finish, and the name looks back to Paris, Kentucky, where Chicken Cock was founded in 1856.
Cherry, plum, and candied date lead, with vanilla and dark chocolate underneath. Caramelized sugar arrives as the fruit recedes. The mouthfeel starts dry and tannic, then opens into a long, warm finish.
