Citrus comes first, bright and clean, with white peach just behind it. Underneath sits something warmer: brioche and toasted almond, the kind of depth that only long lees aging gives a Champagne. A saline mineral edge runs through the finish and keeps it from ever feeling heavy.
Made in Champagne from Chardonnay and Pinot Noir by the traditional method, this is a vintage bottling at 12.5% ABV. The fruit stays firm and stone-driven rather than sweet, and the bubbles are fine enough to carry the toastier notes without blurring them. It drinks beautifully on its own and holds up just as well through a long meal.
Serve it cold but not ice-cold, in a proper white wine glass rather than a narrow flute, and let it open for a few minutes. The 750 mL bottle is the right size for a table of four who want a real pour each.
