El Dorado 18 Year Old Bourbon & Sherry Cask Finished Demerara Rum
Demerara rum is molasses-based and made in Guyana, and it tends to run darker and heavier than most. This one spent eighteen years in bourbon barrels before moving to sherry casks to finish, and the tropical climate does that aging work faster than a cool warehouse would.
Raisin and dried fruit lead, sitting close to a thick caramel sweetness. Underneath there's dark chocolate, a little bitter, which keeps the whole thing from tipping into dessert. Vanilla and baking spice trail off at the end. At 80 proof it drinks easily and doesn't need coaxing, and it's additive free, so what you taste came from the barrel rather than the bottling line.
Good neat after dinner. It also holds up in an old fashioned if you'd rather stir something, and the 750 mL bottle is a sensible size for a rum you'll actually pour on a weeknight.
