Jalisco is where blue Weber agave grows best, and this extra añejo comes from that highland-and-valley heartland with more than three years behind it. American oak has had time to work on the spirit, softening it into something round and gentle without burying the agave that started it all.
Cooked agave still leads, sweet and vegetal, the way it smells coming out of the oven. Caramel and vanilla settle in behind it, thick but never syrupy, and there's a quiet stretch of dried fruit underneath. Cinnamon warms the close alongside a dry brush of oak. At 80 proof it drinks easily, which is part of the point.
This is the bottle for an ordinary Thursday that deserves better than ordinary. Serve it neat in a copita at room temperature, where the sweetness and the spice sit in balance. The 750 mL bottle looks the part on a back bar.
