Bottled at 115 proof (57.5% ABV) and five years old, this Texas Hill Country bourbon has the weight you would expect from a whiskey twice matured in new American oak. The second barrel deepens everything: char, sugar, and the slow heat of a long Texas summer working on the staves.
The nose leans dessert-sweet, all fudgesicle and amaretto coffee. On the palate, sticky buns and pecan brittle come through thick and chewy, with dark cherry cutting the sweetness before baked apple and cinnamon settle in on the finish. Caramel runs underneath the whole pour and keeps it from turning sharp, even at this strength.
Rich enough to sip slowly on its own, though a single large cube opens up the orchard fruit nicely. The 750 mL bottle is a solid pick for a weeknight pour that still feels like an occasion.
