Green Spot Quails’ Gate Pinot Noir Cask Finish Single Pot Still Irish Whiskey
Green Spot Quails’ Gate Pinot Noir Cask Finish Single Pot Still Irish Whiskey is the third Wine Geese bottle from Mitchell & Son and Midleton: malted and unmalted barley, triple-distilled, aged in bourbon and sherry casks, then finished about 16 months in Quails’ Gate Pinot Noir casks from British Columbia’s Okanagan Valley. The series honors Irish families who left home and planted vineyards; the Stewarts’ Pinot barrels are what you taste as red fruit and a soft tannin grip on Green Spot’s orchard spice. Limited 2023 release, bottled at 92 proof. Save it for an after-dinner dram.
Ripe cherry, raspberry, red apple, and cranberry sit on clove, nutmeg, and vanilla, on a silky, mouth-coating pour. Candied orange and lemon keep the spice in front; banana bread and orange marmalade fill the middle. Toasted wood and pot-still spice close it, with Pinot tannin that still reads as pot still.
