High West High Country American Single Malt Whiskey
High West High Country American Single Malt Whiskey is High West's in-house malt from the Wasatch: 100% malted barley distilled on the grain in copper pot stills, so the mash stays in the wash through fermentation and distillation. It is an annual release, matured in new charred American oak and second-use casks — including bourbon, rye, and wine wood — then bottled at 89.6 proof without chill filtration. The mixed cooperage keeps cereal and honey in front of the oak. This is a weeknight pour.
Wildflower honey, lemon peel, and toasted grain open into toffee, graham cracker, ripe melon, and cocoa nibs. The mouthfeel is easy and malty rather than heavy; the close runs citrus zest, pecan, and light oak. It drinks approachable and cereal-led, with enough pastry sweetness to linger.
