Highland Park 25 Year Old Single Malt Scotch Whisky is Kirkwall’s long game: twenty-five years in sherry-seasoned European and American oak, often from barely twenty casks, bottled at 92 proof with natural color. European hogsheads bring spice and dried fruit; American oak adds peach and vanilla; refill casks round the edges. After a quarter century the heathered peat is a fragrance more than a fire. Open it when friends stay late.
Honeyed peach and satsuma meet pistachio biscotti and crème brûlée, then coriander, citrus peel, and a sweet woody finish. Figs, fudge, and dark chocolate sit underneath. It coats the mouth, stays fragrant, and leaves orange peel and gentle smoke on a long close.
