Hillrock Solera Aged Bourbon Whiskey
A solera system keeps older whiskey in constant contact with younger, so nothing is ever fully drained and every pour carries some of what came before. Hillrock builds on that foundation in New York, then gives the bourbon a finish in Oloroso sherry casks. Six years is the youngest whiskey here, and the sherry influence shows in how round the whole thing drinks.
Dark cherry and fig lead, sweet but not sugary, with walnut sitting underneath to keep things from turning jammy. Caramel and butterscotch fill out the body, and vanilla trails into baking spice on the finish. At 92.6 proof, it has weight without heat, which makes it easy to return to on a weeknight and still worth opening for company.
The 750 mL bottle drinks well neat, though it holds up in an Old Fashioned if that is where your evening is headed.
