Jack Daniel's 12 Year Old Tennessee Whiskey is a limited annual Aged Series bottling from Lynchburg. Twelve years in new charred American oak, after Lincoln County charcoal mellowing through sugar maple, with barrels started high in the rickhouse and later moved to cooler lower floors so caramel and fruit can keep pace with the wood. Bottled at 107 proof. Pour it as an after-dinner dram.
Baking spice, maple candy, and caramel lead, with vanilla and seasoned oak close behind. Pipe tobacco, dark cherry, and a little baked banana sit in the middle of a creamy sip that feels calmer than the proof suggests. The finish is long and warm, sweet then drying, with oak, butterscotch, and spice still in the glass.
