Jefferson’s Tropics Aged in Humidity is fully mature Kentucky straight bourbon that spent eighteen months in Singapore’s heat and humidity — about 82 degrees and 84 percent, in non-climate-controlled warehouses — after 720 barrels sailed there in 2019. That equatorial rest slow-cooks the wood sugars, so molasses, cherry, and a hint of sea salt concentrate in the glass; Trey Zoeller bottled the first expression at 104 proof. Open it in cold weather.
Cinnamon and clove on the nose, then toffee, Bing cherry, and strawberry. The sip is creamy and thick: molasses, baking spice, a savory-fruit mid-palate, and that pinch of sea salt. The finish is long and full, with brown sugar, nutmeg, and dry leather.
