Jesse James Outlaw Kentucky Straight Bourbon is a limited Outlaw-series bottling from Preservation Distillery in Bardstown: a three-barrel blend of the distillery’s own pot-still wheated bourbon aged over seven years and older Kentucky wheated barrels, all in new American oak. Wheat in the mash is why it stays round near 109.4 proof, with toffee and dark cherry instead of sharp rye heat. A slow neat pour.
Toffee, dark cherry, and brown sugar lead, with vanilla bean and toasted oak behind them. The sip is lush: cinnamon, roasted nuts, a little orange peel, and dark chocolate, then white pepper. The finish is long and warm, drying on char, wood, and lingering cherry.
