Laws Whiskey House Four Grain Straight Bourbon Whiskey
Laws Whiskey House Four Grain Straight Bourbon Whiskey is Denver grain-to-glass: Colorado family-farm corn and heirloom wheat, rye, and malted barley, cooked so each grain keeps its own voice, then open-air sour mashed before copper distillation. The mash is 60 percent corn, 20 percent wheat, 10 percent rye, and 10 percent malted barley, aged at least four years in 53-gallon new charred oak at mile-high elevation, then cut slowly to 95 proof. Wheat and rye in the same mash give softness and spice in one glass. It belongs in a spirit-forward cocktail.
Orange blossom, black tea, honey, and dusty pepper open the glass. Pekoe tea, orange peel, cinnamon, and vanilla custard sit on the palate, with sweet tobacco and spice leading a rich, dry finish. The mouthfeel is weighty for 95 proof; honey, grain, and a little char hang on.
