Legent Yamazaki Cask Finish Blend Kentucky Straight Bourbon Whiskey is the limited collaboration between Jim Beam’s Fred Noe and Suntory chief blender Shinji Fukuyo. Eight-year Kentucky bourbon traveled to Yamazaki, outside Kyoto, where portions finished in French oak wine casks, Spanish oak sherry casks, and rare Spanish oak that had already held Yamazaki malt; those three lots were blended with more eight-year bourbon and bottled at 114 proof. The humid Japanese seasons and sherry wood pull dried fruit and malt onto Beam caramel. Open it after dinner and take your time.
Vanilla, caramel, and brown sugar lead, then berries, raisin, and darker fruit push through. Baking spice sits underneath; the finish turns drier, with tobacco, ginger, and a flicker of pepper. At 114 proof the texture is thick and coating rather than sharp, so the fruit stays in focus.
