NETA Ensamble Espadín & Bicuixe Agave Spirit
Oaxaca is where agave spirits like this one are made the old way, and NETA's ensamble follows that path closely. Espadín and Bicuixe are cooked together in an earthen pit, then distilled in a copper pot still. That pit is where the smoke comes from, and here it stays gentle rather than heavy.
Roasted agave leads, sweet and vegetal at once. Citrus lifts it, green herbs run alongside, and there's a soft tropical fruit note underneath that keeps things from turning austere. The close is dry and mineral, with earthy smoke lingering after the fruit fades.
The spirit is additive free, so what you taste is the agave, the fire, and the still. Sip it at room temperature in a small cup, the way it's drunk in Oaxaca, and let it sit a moment before the first taste. Comes in a 750 mL bottle.
