Extra añejo is where tequila slows down, and four years in American oak have taken this Blue Weber agave spirit a long way from its blanco beginnings without burying what made it worth aging. It stays additive free, so what you taste is agave and time and nothing arranged to smooth the edges.
Cooked agave is still the center of it, sweet and vegetal, with plum and caramelized pineapple pressing in around the edges. Underneath runs a streak of mineral brine that keeps the sweetness honest. Vanilla and toasted brûlée sit on the finish alongside the oak, warm rather than heavy, and 90 proof gives it enough weight to linger.
The Jalisco Highlands lend the fruit-forward, faintly floral quality that marks agave grown at altitude. A 750 mL bottle that drinks well neat, at room temperature, in a small glass with a narrow lip.
