Preservation Distillery Pot Still Rye Whiskey
Bottled at cask strength, 116.6 proof (58.3% ABV), with seven years behind it in new charred American oak. That combination gives this Kentucky rye real weight without turning it hot or harsh. The pot still character shows up as texture — thick, a little oily, coating rather than sharp.
Dark cherry and caramel sit together up front, sweet enough to soften the entry. Black pepper cuts through underneath, which is where the rye grain makes itself known, and a cool streak of mint runs alongside it. Cocoa and toasted grain settle in at the end and hang around a while.
At this proof it takes a splash comfortably if you want to open it up, though it holds together neat over a large cube. It also makes a sturdy Old Fashioned, since the sweetness and pepper both survive dilution. Sold in a 750 mL bottle.
