Preservation Distillery Pot Still Rye Whiskey is Bardstown estate rye: Northern Artisan rye, heritage corn, and roasted barley, double-distilled in copper pot stills, seven years in new charred American oak, then bottled unfiltered in one-to-three-barrel lots at 116.6 proof (58.3% ABV). Pot still is why it coats instead of snapping; the rye grain is why pepper and leather show. A cold-weather bottle.
Caramel and toasted grain open, then rye bread and leather. Black pepper, dark fruit, and cocoa stand out on the palate; the mouthfeel is viscous and oily, and the finish is long on rye spice, caramelized sugar, and pecan.
