Rabbit Hole Cavehill Four Grain Kentucky Straight Bourbon Whiskey is Louisville's four-grain triple malt: 70% corn with equal parts malted wheat, malted barley, and honey-malted barley, aged five to six years in Kelvin Cooperage barrels that are wood-fire toasted before the char, then blended in lots of no more than fifteen. Honey malt is why the sip reads like cereal and fresh apple. Bottled at 95 proof (47.5% ABV). A weeknight pour.
Fresh apple, honey, and mint open first, then creamy orange. Vanilla, custard, and a little white pepper stand out on the palate; the mouthfeel is coating, and the finish is medium on honey, lemon cake, and spice.
