PX Sherry Cask Finish
In stock
Rabbit Hole Dareringer Straight Bourbon Whiskey Finished in PX Sherry Casks 93 Proof is Louisville wheated bourbon—65% corn, 25% wheat, 10% malted barley—aged in wood-fire toasted, alligator-char oak, then rested in handmade Pedro Ximénez casks from Casknolia in Spain. Wheat and PX are why cherry and raisin wrap the caramel. Small batches of no more than fifteen barrels, unfiltered at 93 proof (46.5% ABV). Keep it for a dessert pour.
Sherry and cherry lead, then raisin, currant, and almond. Vanilla and fig stand out on the palate; the body is round and sweet, and the finish dries on barrel spice, tobacco, and dark fruit.
