Rabbit Hole Heigold High Rye Kentucky Straight Bourbon Whiskey is Louisville high-rye bourbon: 70% corn, 25% malted German rye, and 5% malted barley, barreled at 110 proof in Kelvin Cooperage American oak that is wood-fire toasted before the char, then aged about four years. The malted rye is why toasted malt and pepper sit on butterscotch. Unfiltered at 95 proof (47.5% ABV). Use it in a spirit-forward cocktail.
Toasted malt and baking spice open, then silky butterscotch and bright citrus. Pepper spice and cinnamon stand out on the palate; the body is chewy, and the finish is dry on fruit, almond, and a crescendo of pepper.
