Rare Character Hurst Knoll 8 Year Old Kentucky Straight Rye Whiskey is a blend of Kentucky rye barrels developed by Pablo Moix and bottled in Lexington at 101 proof (50.5% ABV). Officially the whiskey is at least seven years old; this bottling is labeled eight. Built for a Manhattan or Boulevardier, it is a spirit-forward cocktail rye with enough oak time for caramel and toasted wood to sit beside the spice.
Black pepper and cinnamon lead, then caramel, brown sugar, and toasted oak fill a warming sip with clove and vanilla. The finish is long and spicy, with baking spice and a dry wood close. At 101 proof it holds up in a stirred drink and still drinks clean neat.
