Rare Stash Bourbon #3 is Dustin Poirier’s all-Kentucky blend: a 25-barrel lot of nine-year and five-year straight bourbon, both a 78 percent corn mash with rye as the flavoring grain, both aged in Char #3 oak, then bottled at 96 proof so the caramel stays rich without heat taking over. Medium char and those extra years give honey and maple room beside the wood. Keep it for a weeknight pour.
Vanilla, honey, and maple open, then bold caramel, butterscotch, citrus, and cinnamon take the sip. The mouthfeel is full and warm; honey and coriander linger with brown sugar and spice on a long finish.
