Rare Stash Bourbon Whiskey is Dustin Poirier’s 91-proof marriage of 8.5-year Tennessee bourbon from Char #4 oak and 7.5-year Indiana bourbon from Char #3, both a 75 percent corn mash with rye behind it, blended in Bardstown. Deeper char on the older whiskey brings chocolate; the younger casks keep vanilla and caramel open. Pour it over a large cube.
Vanilla, caramel, and oak lead, with butterscotch and a hint of chocolate behind them. The sip is bold yet smooth — filling at first, then a soothing warmth — and the finish runs long with gentle heat instead of burn.
