Cognac Cask Finish

Redemption Cognac Cask Finish Bourbon Whiskey is a limited Specialty Series bottling: high-rye bourbon (60% corn, 36% rye, 4% malted barley) aged in new American oak, then finished twelve months in Ferrand Cognac casks — some more than thirty years old — so stone fruit and a warming sweetness join the rye spice. Non-chill filtered and bottled at 99 proof. It belongs in a spirit-forward cocktail.
Hibiscus, Concord grape, and vanilla custard open the glass. Plum, peach preserves, and spiced poached pear fill a medium-full sip, with baking spice and a little French oak. Buttered pecan, praline, and rye spice hang on a long, warming close.
