Ian Stirsman assembled five high-rye bourbons aged nine to sixteen years — 21% rye and 36% rye stocks from 2007, 2013, and 2014 — with a small pour of 2007 whiskey for extra oak. That older high-rye mix is why candied cherry, maple, and cinnamon show up without needing barrel-proof heat. Pour it as an after-dinner dram.
Caramelized pecan, candied cherry, and maple open, then rich caramel, raisin, and barrel char. Cinnamon and a cool peppermint spice run through an oily sip. Vanilla, caramel, and oak linger on a medium, warming finish.
