Rey Campero Tobalá Mezcal
Mezcal comes from Mexico, and this one is made with Tobalá, a small wild agave that takes years to mature and yields very little once it's roasted. Like all mezcal, the agave here is cooked in an underground pit, which is where the smoke in the category comes from — a low, earthy note rather than a campfire.
Fresh sugarcane leads, sweet and green, with tropical fruit sitting just behind it. Citrus keeps everything bright, and there's a herbal edge underneath with a touch of light oak at the end. At 80 proof (40% ABV) it drinks easily, without the heat that can make agave spirits hard work.
This is additive free, meaning nothing was added to soften or sweeten what came off the still. A 750 mL bottle, and an easy one to keep open on the shelf and pour in small measures.
