Shibui 10 Year Old Bourbon Cask Single Grain Japanese Whisky is distilled at Shinzato Distillery in Okinawa from indica long-grain rice, fermented with Okinawan black koji, and run once through a stainless-steel pot still. Ten years in ex-bourbon American oak, non-chill-filtered, bottled at 80 proof. The koji and subtropical warehouse give pastry and crème brûlée over cracked pepper. Keep it for a weeknight pour.
Fresh pastry and caramelized sugar open onto crème brûlée and vanilla. Caramel and oak spice fill a creamy sip, then cracked black pepper. Spiced oak and a little cocoa hang on a long, sweet finish.
