This Okinawan whisky spent that stretch in first-fill Fino and Manzanilla sherry casks, the drier end of the sherry spectrum, which keeps the sweetness in check and lets the grain's softer side come through.
Ripe banana leads, backed by vanilla and a bright thread of red fruit. Underneath sits cocoa, dusty rather than sweet, with baking spice warming the back palate and a faint coastal salinity that lingers after everything else has faded. At 86 proof (43% ABV), the texture is gentle and rounded, easy to drink slowly without any burn to work through.
