Shibui Pure Malt Whisky is a no-age-statement marriage of 100% malted-barley whiskies from Niigata and the Scottish Lowlands, double-distilled in copper, matured in ex-bourbon and oloroso sherry, then finished in Japanese Mizunara, non-chill-filtered at 86 proof (43% ABV). Mizunara is why the spice stays dry and sandalwood-like while sherry lays chocolate and walnut. A weeknight pour.
Candied walnut, chocolate-covered raisin, and coffee open, with maple and malty cereal underneath. Amaretto biscuit, bitter orange, and clove stand out on the palate; the mouthfeel is medium, and the finish holds pepper, malt, and lingering Mizunara spice.
